From August 29 – September 7, 2025, ITC Royal Bengal invites guests to savour the vibrant culinary heritage of Rajasthan through Rangeelo Rajasthan, an exquisite promotion at the Grand Market Pavilion.
Curated by Chef Kailash Meena of Udaipur, this special dinner buffet journeys through the four distinct regions of Rajasthan, presenting a medley of traditional flavours with a contemporary finesse.

“While Rajasthan’s regions share a culinary soul, each carries its own distinct rhythm,” notes Chef Meena. “From the generous use of curd and milk to the celebrated Mathania chillies and whole spices, Rajasthani cuisine is a revelation. Jodhpur leans bolder and spicier, while Mewar is gentler, more delicate — together they form a gastronomic map unlike any other.”

The menu is a rich tapestry of regional delicacies, from the lakeside elegance of Mewar with Jaysamand Ki Machhi, Sangri Ki Shami and Rasgulle Ka Saag, to the rustic charm of Shekhawati with Padampuri Murgh, Sangri Ki Kadhi and the celebratory Ghewar.

Marwar offers hearty, soul-warming classics like Dal Bati Churma, Papad Paneer Ki Sabzi and Murgh Makai Ka Soyta, while Hadoti delights with Murgh Ke Parchey, Jungli Maans, Malpua and Rabdi.

Each dish not only honours its origin but also highlights the culinary artistry of balancing spice, texture and depth without overpowering the palate.

Among my personal favourites were the Jaipuri Dum Aloo, Padampuri Chicken, and a luscious Paneer & Anjeer Curry — a trio that shone brightest when paired with fragrant garlic naan. We began with Chandan Kesar Ka Sharbat, a delicately sweet, neutral, and perfumed drink with a refreshing overture to a rich symphony of flavours. The Gosht Shami and Fish Kebabs deserve special mention — perfectly spiced, tender, and deeply satisfying.


Rajasthani cuisine is anything but one-dimensional; it is a dialogue of spice, sweetness, salt and tang — bold yet beautifully harmonious. Rangeelo Rajasthan celebrates precisely that spirit, inviting diners not just to taste but truly experience the cultural richness of Rajasthan on a plate.
